The historical town of Burgos in northern Spain has existed since 884. It is a vacation destination full of medieval ambiance with plenty to see and do. The most recognizable food from Burgos is a dish of fresh cheese that has a slight flavor of goat's milk. It is known as "Queso de Burgos". The food of the town has a very good reputation, with roast lamb, pork and hotpot among the local specialities. Fish dishes, crab salads and codfish are also to be found served widely across this region of Spain. The confectionery of this area is excellent and worth sampling during your stay. Traditional pastries such as "yemas de Burgos" are popular with locals and tourists alike. This being Spain, many dishes benefit from being served with a good wine. Such a wine may be sourced locally from Ribera del Duero. There is now more of a trend for promoting and cooking original products of the area.
